About the Recipe
If you love bowls, this one is for you. The base is brown rice, but you can mix it up (literally) and add whatever protein, vegetables, and toppings you prefer. The recipe features some healthy functional foods for a tasty and healthy boost! Best of all- you can prep these ingredients ahead of time, and when you are ready, layer it up for a quick lunch or dinner.
Ingredients
Protein of choice: chicken or salmon are always good options
Edamame (optional)
Brown Rice or Your Choice of Rice
Shitake Mushrooms
Kale or Roasted Broccoli (I used both)
Pineapple Chunks
Wonton Crisps (topping)
Sesame Seeds (topping)
Teriyaki Sauce (drizzled on top for added flavor)
Preparation
Prepare the protein and season as desired (I boiled and shredded chicken)
Roast Broccoli (if desired) or Prepare Kale by washing and stripping the leaves
Chop Pineapple into small chunks
Chop Mushrooms
Cook Rice
Assemble Bowls
Add rice to bowl and top with protein of choice
Add edamame, if desired
Next, add kale or broccoli (both, if desired)
Then, add mushrooms and pineapple chunks
Finally, top with sesame seeds, wonton crisps, and drizzle with Teriyaki sauce
